Made this for dinner tonight, turned out really good, better than I hoped.

Ingredients

- 1 cup instant mashed potato flakes (you may need more)
- 1/2 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon parsley
- 1/3 cup milk of your choice ( I used non-fat skim)
- 1 bag of frozen hash browns
- 4 boneless, skinless chicken breasts

In a shallow bowl, combine the potato flakes, salt, paprika and parsley flakes. Set milk aside in another bowl. Dip the chicken breasts in the milk, then coat with potato mixture thoroughly.

Spread frozen hash browns in pan and then arrange chicken breasts into pan. Bake in preheated 425 degree oven for 45min to 1 hour. (My chicken breasts were still slightly frozen so I cooked closer to the hour and they were sooo tender)
Bake until chicken is tender and juices run clear when pierced.

You can add broccoli, carrots, peas whatever else you like as well as an extra item.

YUMMY!!!!
