Ok so I keep getting text msgs on how to fix this or that.. so I figure when I do.. I am going to post it up for everyone....

today it was a text on how to get seasonings to stick to Almonds when I roast them.

1st I buy raw almonds from Costco or Nutsonline.com (cheaper at costco)

I keep them in the fridge and roast up about 3 lbs at a time. NEVER put nuts in the freezer and it makes the oils go all funky when defrosted.

Ok... roasting nuts....

you can use Cumin, cinnamon, chili, salt or whatever your little hearts desire in this...

*NOTE SPLENDA does NOT NOT NOT work here :uih_wah: .. it gets all kinds of funky nasty black and :puke:

ok so take a few egg whites... for 3 lbs I use about 4 and beat them with whatever seasoning until firm... then toss your nuts in them... :laughter02: (not those the almonds!)

then spread on a tin foil lined pan and roast in oven at 325 +/- until done.. they will be chewy when you take them out... but do so when LIGHT LIGHT LIGHT golden inside.. like barely a hint... you can always put them back in after they have cooled if you want them crunchier but they get nasty burnt tasting FAST!

They will keep in a tupperware container on the counter top (fridge makes them sticky) for a few weeks.

3 cups cooked or canned lentils
1 cup feta cheese, crumbled
1 cucumber, diced
3 stalks celery, diced
2 cups cherry tomatoes, quartered
1 red bell pepper, diced
1 small red onion, diced
1/2 cup parsley, chopped
1/4 cup mint leaves, chopped
1/3 cup lemon juice
3 Tbsp. olive oil
1/2 tsp. dried thyme
Salt and pepper to taste
Combine first nine ingredients in a large bowl. Whisk together lemon juice, olive oil, thyme, and salt and pepper, and toss with first nine ingredients. Cover and refrigerate for an hour or two. You can eat it as soon as it's done, but it just gets better the longer the flavors combine. The next day is the best! Makes 4 servings.


Nutritional Information (per serving):

Calories Fat Total Carbs Fiber Protein
424 19 g 45 g 16 g 21 g


Bump it up by adding some lean grilled and cooled steak or chicken! Im a garlic fan..( ok fiend...) so I also add some chopped garlic.

ground wild hog (or a lean pork I use wild hog since it is super lean and I have access to it or you can use lean beef) 20 lbs
smoked sausage (turkey works) 5 lbs
Rotel tomatoes & green chilies 10 10 oz cans
diced stewed tomatoes 10 14 oz cans
tomato sauce 20 8 oz cans (or get one of the big cans but make sure the #s match)
onion 10 chopped
bell pepper 5 chopped
minced garlic 10 Tbs
green onion tops (for topping)
Worcestershire sauce 10 oz (you can not omit this.... it wont taste the same!)
chili powder 10-25 TBS depending on how hot you like it
cajun seasoning mix 5 tbs

Add Kidney beans to your liking

Brown/drain meat... then add the rest and cook slowly for 4-6 hours

I would not add more than 10 TBS of chili powder until at least 1/2 way through cooking because it gets "hotter" as it cooks!

This is for 60 people because its something I cook when we have big groups. You can split it in 1/2 and it freezes PERFECT in vacuseal bags. Chill then put in the bags... too messy the other way!

another nut one>>>>

Maple Cinnamon Nuts....

3-4 cups raw nuts
1/4 cup sugar free Maple Syrup
1.5 tsp cinnamon
3 tbs butter (you can use canola oil here too)
and 1/4 tsp salt

Heat all stuff up.. pour over nuts... put on lined baking sheet in oven at 300 until dry (abt 30-40 min)
